Papas Rellenas

The recipe here is for beef stuffed papas rellenas, but it can really be stuffed with anything.

Ingredients

  • Potatoes, 8 large, peeled

  • Eggs, 2 large

  • Corn starch, 1 tbsp

  • Frying oil

  • Ground beef

  • Salt, 1.5 tsp

  • Pepper, 1 tsp

  • Onion, diced

  • Green pepper, diced

  • Garlic, 2 cloves, minced

  • Ground beef (90% lean), 1 pound

  • Cumin, 1 tsp

  • Paprika, .5 tsp

  • Tomato sauce, .5 cup

Equipment

  • Potato masher

  • Pot

  • Frying vessel of some sort. I like using an enameled dutch oven or cast iron pan.

Instructions

  1. Peel potatoes, cut into cubes, boil until soft, about 20 minutes.

  2. While potato is boiling, cook ground beef until no longer pink and drain, then cook with with onions, pepper, and minced garlic. Season with salt, pepper, garlic, cumin, paprika, and tomato sauce.

  3. Drain potatoes and mash. Mix with corn starch and eggs. Season with salt and pepper to taste.

  4. Cover your palm with mashed potato and squeeze to firm it up. On the potato patty, add the beef mixture. Shape the potato around the beef and form a ball. Set this aside. Repeat until all the beef and potatoes are used up.

  5. Heat up some oil for frying, until it reaches a temperature of 375 degrees Fahrenheit.

  6. Fry papas rellenas until the surface is nicely browned. Drain on paper, then serve.
