Mayo lobster roll

Ingredients

  • Lobster, 2 whole, about 2 pounds each

  • Mayonnaise, 4 tbsp

  • Lemon, half

  • Celery, diced

  • Fresh dill

  • Parsley, minced

  • Split buns

  • Salt

  • Pepper

Instructions

  1. Boil up a stock pot full of water, salted

  2. When the lobster is nice and red, remove them and dunk them into ice cold water. Don’t overcook them.

  3. Break down the lobster and remove all the meat. This is pretty messy. Work on a baking tray to contain the mess.

  4. Cut lobster into bite-sized pieces.

  5. Mix mayonnaise, lemon juice, some lemon desk, celery, dill, and parlsey. Toss in the lobster bits and mix.

  6. Toast the buns on a pan with butter, top with mayonnaise, optionally garnish with lettuce, and serve.
